Cheesecake for Shavuot Anyone?
For those who celebrate Shavuot (the giving of the Torah at Mt. Sinai) and Pentecost here is a great cheesecake recipe:
Chocolate Raspberry Truffle Cheesecake
1 1/2 finely crushed Oreo cookies or (1 1/2 cups flour, 1 cup sugar, 1/2 cup liquid chocolate syrup, 1/2-1 cup butter)
2 tbls melted butter (if you use the Oreos)
4-8 oz pkgs cream cheese
1 ¼ cups sugar
3 eggs but you can use 5
1 cup sour cream
1 tsp vanilla
1-6 oz pkg of melted chocolate chips
1/2 cup raspberry preserves or fresh raspberries
1 -6 oz chocolate chips melted
¼ cup cream
Combine crumbs and butter. Press onto bottom of spring foam pan, 9 inch. Combine pkgs of cream cheese and sugar, mixing a medium speed until well blended. Add eggs. Blend in sour cream and vanilla. Pour over crust.
Combine remaining cream cheese and 6 oz melted chocolate chips, mix with blended until well blended. Add preserves or fresh raspberries. Drop by spoonful into cheese batter. DO NOT SWIRL.
Bake at 325 for 1 hour 20 minutes. Loosen cake from pan after cooling. Melt chocolate and cream and spread over cooled cheesecake.
You can double the recipe but increase the baking time until set in the center.
